Roast Porchetta
Ingredients for 4 servings:
a porchetta
vegetable margarine melted butter or rosemary
laurel
thyme
salt and pepper
Prepare the porchetta clean for cooking, taste it internally with herbs,
salt and pepper.
Insert after you spit on the brush with vegetable
margarine or butter.
Continue to brush even while running.
Towards the end of cooking wrap a piece of bacon in
paper plant, insert it on a long fork, fire it and when the bacon begins
to burn, hold the fork above the porchetta.
The drops of lard inflamed that will fall on cooked
meat, making it crunchy and tasteless.
The cooking will be about 3 hours, depending on the
thickness of porchetta; should be golden and crispy
