Ribbon noodles IN
SALAD
Ingredients for 4-5 people:
500 grams of a green pepper linguine
a yellow pepper
a sweet red pepper
2 young onions
3 pairs of sausages salt
for seasoning:
vinegar
salt
mustard oil
for garnish:
a tube of mayonnaise
Roasted peppers after they've been washed and dried, peel them and take
out seeded and cut into strips.
Put the onions, freed from the leaves, soaked for one
hour in cold water, then dry and mince coarsely.
Cook the pasta al dente, drain and leave to cool.
Meanwhile in a bowl beat 3 tablespoons of vinegar
with a teaspoon of salt and a mustard diluted with a little 'of water,
then add 6 tablespoons of oil and when you have obtained a
well-emulsified sauce, seasoned pasta to which you added the strips
peppers, onions and chopped boiled sausages and cut into slices.
Pour everything in the dish and the pasta is trimmed to
the edge of the plate with ghirigori of mayonnaise sauce
