Bavarian Recipe
with raspberry gelatin Traditional balsamic
vinegar from Modena and zabaglione
Ingredients: 50 grams of milk, 100 grams
of mashed raspberries, 40 grams of sugar, 90 grams of cream, 5 grams of
gelatin, 1 egg yolk.
Preparation: bring to the boil the milk with ten grams of sugar, gelatin
and a tablespoon of brandy.
Versiamo milk and mixing and forgiven on the fire and cook, as for cream

and then join the remaining sugar with the egg yolk mixed, Brandy and
the pesto of pistachios.
We all do the colander and cool.
Sforniamo the Bavarian and pour the sauce around all of pistachios,
guarniamo finally with mint leaves and berries.
Time required: about 1 hour
